-- Epulario, or the Italian Banquet, 1598
To make 6 patties:
- 1 small onion, finely chopped
- 8 semi-dry figs, finely chopped
- 1 cup cooked fava beans
- 1 tsp dried, powdered sage
- 1 tsp dried parsley leaves
- 1 tblsp flour
- 1/4 cup olive oil (for frying)
- 1 tsp mixed spices (I used pre-made poudre fort)
To serve 40:
- 6 large onions, finely chopped
- 1kg dried figs, finely chopped
- 10 cups cooked fava beans
- 2 tblsp dried sage
- 1/2 bunch fresh chopped parsley
- 1/2 cup flour
- 2 cups olive oil
- 2 tblsp poudre fort (pepper, ginger, galangal, cinnamon, cloves, mace)
Cook beans. Process in food processor until smooth. Mix with figs, onions, sage, parsley, and flour. Leave to sit for a while and check consistency. (It will sit well for a few days at this point.)
Make small patties and shallow-fry in olive oil. Sprinkle with spices before serving.
